Best Rocky Road Recipe: Quick, Easy & Delicious!

Wow, how long has it been since I’ve posted a RECIPE on my blog? I think it’s been about 5 years or so but I’ve always enjoyed food and cooking so I’m quite excited to be sharing this today. I’m usually better at cooking than baking but as this is a no-bake recipe, it turned out absolutely perfect so I’m excited to share with you what, in my opinion, is the best rocky road recipe!

In the distant past, I’ve shared a couple of sweet recipes including these Cherry and Coconut Cupcakes (DELISH!) and these No-Bake White Chocolate & Oreo Truffles. But in general, I’ve always been more confident at cooking as opposed to baking. I really have had some absolute disasters when trying to bake before! 

But like I said, this is another no-bake recipe. And to me, no-bake means “nothing can go wrong”. So it seemed like a perfect one to try out for myself and boy oh boy am I glad I did!

I actually originally tried this recipe at a family funeral. Which although considering the circumstances was actually a lovely day where we all got to spend time together, chat and eat lovely food prepared by my boyfriend’s family. One of the things there were these rocky roads so of course I had to pinch the recipe and try it for myself! The great things about a rocky road is that you can pretty much add whatever you want to it; marshmallows, seeds, organic almonds, biscuits, anything!

I’m sure there are many variations to the steps in this recipe as it’s literally so easy that mostly everything works. But I’ll go through how I personally made them because they came out beautifully, so clearly I did something right!

Step 1: First of all, you’ll want to line your baking tray. I didn’t have any greaseproof paper, so I simply greased mine with butter. Both will work – so don’t fret if you don’t have greaseproof paper lying around.

Step 2: Grab your biscuits and place them in a freezer bag or a food bag (you know, the type that you put your kids sandwiches in for a school trip). Then bash them up until they’re crumbly. You can do this in various ways – hitting them with a rolling pin, bashing them on the counter, whacking them over someone’s head – whatever suits you.

Note: Don’t bash them up too much so they’ve turned to dust. You’ll want various sized pieces of biscuits in your rocky roads so there’s lots of crunch!

Step 3: Melt your butter, chocolate and golden syrup in a large saucepan over medium heat and continue to stir until completely smooth. Then remove from the heat.

Step 4: Take your bashed up biscuits, marshmallows and anything else you want to add into your rocky roads (maybe nuts or extra chocolate) and pour into the chocolate mixture. Stir until everything is completely covered in chocolate. You might want to save back a couple of mini marshmallows to place on the top like I did. Just because it looks cute!

Step 5: Pour this mixture into your baking tray and spread evenly. Then pop it in the fridge for a minimum of 2 hours or until the chocolate is hard.

Step 6: When your rocky roads are ready to eat, take them from the fridge and cut up into squares or rectangular sized pieces. Dust with icing sugar to finish them off and voila, you’re done!

I’ve tried a lot of rocky road recipes in the past and honestly, this is the best rocky road recipe I’ve tried. It’s not too overloaded with ingredients but it has the crunchiness it needs as well as the gooeyness of the marshmallows. This recipe makes for a really good treat for an occasion that people can pick up and take when they want!
