If you know me at alllllll by now, you’ll know I don’t relax. Ever. I just find it so incredibly difficult and I have this incessant need to be constantly productive, 24/7. I love how I’m able to get so much done. I love that I’m a goal orientated person. I love that I can get through my daily to-do lists and go to bed knowing I’ve physically done everything I could have possibly done that day. My organisational skills and my Type A personality is one of the only things I actually like about myself so I’m not going to go and start putting myself down for it! But…. I know that it can get unhealthy. We all need down-time. Every single one of us.
Over the past year, I’ve ventured more and more into the kitchen to try new recipes and dishes and although I’m no Nigella, I would say that cooking is a big love of mine. I was contacted by the lovely Ashton and the guys at Lobster Homeware about potentially reviewing one of their gorgeous, newly launched aprons – all designed by a lady called Nathalie with inspiration that comes from her Dominican background and her closest loved ones. I absolutely loved that idea as I find cooking is quite a sentimental hobby and a great way to connect and feel close to your own loved ones.

In case you didn’t guess by the title of this blog post, today, I turned 23. To me, 23 is a big scary number that makes it sound like I should have it all figured out when really, I don’t. For that reason mostly, I’m not a huge fan of my own birthday (other people’s however, I love!) because more often than not you focus more on what you haven’t achieved by the age you turn, rather than what you have. But this year, I thought I’d try and put things a little more into perspective.
Now we made these Thai fish cakes months ago but at the time, it didn’t occur to me to do a recipe post about them. We made them again the other day because honestly, they are the most amazing things I have ever tasted! I am salivating just thinking about them so there’s no way I couldn’t write a food blog about them and share the recipe with you all. these are perfect as either part of a main meal or even on their own as a snack.
